Eutrema japonicum 'Daruma' is a rarity in Canada. The stem of this plant is what genuine wasabi paste is made from. What we often get here in restaurants is known as "western wasabi" and does not actually contain any part of the actual wasabi plant. All parts of the plant are edible. It has very specific growing conditions that make it hard to produce in large quantities. Since it naturally grows along stream beds, it prefers to stay consistently moist and higher humidity. It can not withstand direct sun.
